Don’t you just hate it when you buy a bunch of bananas, only for them to turn black and mushy in just a few days? It’s such a waste! But fear not, because I have a method that will help you preserve your bananas for up to two whole years, so you can enjoy them whenever you want.

Prepare your bananas

To get started, you’ll need to gather your bananas and give them a little TLC. First, gently scrub the peel of each banana with a toothbrush and a sprinkle of baking soda. This will help remove any dirt or residue. Rinse the bananas under running water and pat them dry with paper towels.

Slice and layer

Now it’s time to slice your bananas into pieces that are about two fingers thick. But don’t peel them just yet! Once you have your slices, get some glass jars that can hold around 700 ml of liquid. In each jar, layer the following ingredients: a bay leaf, two cloves of garlic (or two cloves), two slices of chili pepper, a teaspoon each of coriander seeds and dill seeds, and a mix of white, black, green, pink pepper, and allspice.

Then, add the banana slices (about a dozen per jar) and a few more slices of chili pepper. Sprinkle a teaspoon of sugar, a teaspoon and a half of salt, a teaspoon of 70% vinegar, and some hot water into each jar.

Sterilize and seal

Now that your jars are filled with all the goodness, it’s time to make sure they stay fresh for a long time. Place the jars in a pan of hot water with a cloth underneath to prevent breakage. Heat and sterilize the jars, with their lids loosely placed on top, for around ten minutes.

After sterilization, carefully dry the jars and seal them tightly to keep any air from entering. It’s important to store the jars in a cool place to maintain the freshness of the bananas. And voila! Your bananas will stay fresh for up to two years.

Long-lasting bananas, no more waste!

With this simple method, you can now say goodbye to the frustration of buying bananas only to have them go bad in a matter of days. Enjoy your favorite fruit for a longer period and reduce waste at the same time. So go ahead, stock up on those bananas and savor their deliciousness whenever you crave them.
