To make your bananas last longer, follow these easy steps:

Before you begin preserving your bananas, it’s important to prepare them properly. Gently scrub the peel of the bananas with a toothbrush and a little bit of baking soda. Rinse them thoroughly under running water and pat them dry with paper towels.

Now, without peeling the bananas, remove both ends and slice them into pieces that are roughly two fingers thick. Grab some glass jars with a capacity of around 700 ml. We’re going to layer all the ingredients to ensure maximum freshness.

Start by adding a bay leaf, followed by two cloves of garlic (or two cloves), two slices of chili pepper, a teaspoon each of coriander seeds and dill seeds, and a mixture of white, black, green, pink pepper, and allspice.

Place about a dozen banana pieces in each jar, and if you like some extra spice, add a few more slices of chili pepper. Sprinkle a teaspoon of sugar, a teaspoon and a half of salt, and a teaspoon of 70% vinegar over the bananas. Finally, pour some hot water into each jar.

Now it’s time to sterilize the jars to ensure that your bananas remain fresh for a long time. Place the jars in a pan of hot water with a cloth underneath to prevent breakage. Heat and sterilize the jars, with their lids loosely placed on top, for approximately ten minutes.

After sterilization, carefully dry the jars and seal them tightly to prevent any air from entering. Store the jars in a cool place, and ta-da! Your bananas will stay fresh for up to two years.
